By Pete Allman

Mon Ami GabiOne of the wonderful places to enjoy is Paris. The words to the song, "I love Paris in the Spring Time," are a delight. The cuisine there is wonderful, with its colorful array of dishes. In Las Vegas the Paris Resort and Casino has the famous Mon Ami Gabi Restaurant, which has a beautiful patio which looks upon the "Dancing Waters Show at The Bellagio. Enriched would beautiful oak decor, a huge wine cellar and plenty of dining area, Mon Ami Gabi can serve as many as 4000 people a day.

Quality is foremost with this eatery. One must remember that French food was influenced by Italian cuisine in the 17th Century. Chef Francisco Pierra La Varewne and Marie -Antoine Careme spearheaded movements that shifted French cooking away from its foreign influences which developed France's own unique style. Cheese and wine are a major part of the cuisine, adding to different roles regionally and nationally with many variations. Thus visitors to Las Vegas can enjoy a bit of France at Paris Resort and Casino.

Mon Ami GabiMy guest for this occasion was Victoria Boone, a real estate broker whose traveled the world and appreciates ambiance, excellent service and bones for her pit bull. Our waitress, Barbara, attended to our every needs. Our culinary journey began with the "Dancing Water Show" at The Bellagio, while toasting to a successful 2014. The appetizers Chef Terry Lynch prepared where Duck Confit, prepared with lentils du pay in a port wine reduction and Oysters Du Jour, shallots with black peppered prignonilte and fresh horseradish. A wonderful taste on both of these, not to mention some excellent Onion Soup Au Gratin baked with gruyere cheese and a Lobster Bisque with a Sherry reduction.

The main dishes prepared were Sea Scallops Gratinees, with caramelized funnel and a onion marmalade mussel cream. "Considering the location and the quality of food, this is one of the nicest dining experiences I've enjoyed for a long time," stated Victoria Boone.

Mon Ami GabiMy choice, the Steak Frites, was a Filet Mignon with Merlot butter in a red reduction, served with hand cut fries. All the beef selected at Mon Ami Gabi is grain fed Midwest beef and is prime. It's no wonder that this particular eatery is the busiest on the strip.

Time for the deserts, which are prepared on premises. The warm chocolate cake and the crème brulee added to the finishing touch to the evening with a cup of espresso.

Weather your having a Traditional French breakfast, lunch or dinner, Mon Ami Gabi is a must, upon your visit to Las Vegas.
