Settlebello's Celebrity Chefs Aim For Iron Chef

Settlebello's Celebrity Chefs with Pete AllmanBrad Otton, the former quarterback who played for USC, that won the Rose Bowl and owner of Settlebello's, has two chefs who are rising stars. Donald Mc Whirter and Riccardo Paolinelli, aim to make a challenge to be on the Iron Chef. I met both gentlemen recently, while writing this food review on Settlebello's in Marina del Rey, which is also in Henderson, Las Vegas.

Donald Mc Whirter has a passion for making Neapolitan pizzas and has mastered his craft through the mentoring of world famous pizza chef, Carmine De' Amato. Chef Mc Whirter believes in using the finest flour, Antima Caputo from Napoli, Italy. "I make our dough fresh each day with salt, flour and yeast. We put love in all of our pizzas, just the way it was done 400 years ago," stated Chef Mc Whirter.

Riccardo Paolinelli has been cooking since he was five years old. He had a working Mother and fortunately for him, learned all the traditional recipes of Italian cooking in Sicily and Napoli. Chef Paolinelli has worked in some of the finest restaurants throughout Italy. Both he and Chef Mc Whirter have the personality in delighting patrons with their own style of authentic Italian cuisine.

Scopa, Settlebello was established to cultivate the culinary art of making Neapolitan style pizza. Pizza Napoletana is hand made with a soft, naturally risen dough, cooked in a 900 degree wood burning oven in about 11 minutes. It has distinct characteristics. For one, it's not crispy, it is elastic, soft and fold-able, with blackened char spots on the crust. It should be eaten immediately to savor the taste.

In selecting your pizza, I would recommend the Pizza Carbonara, made with crushed San Marsano tomatoes, panchetta, egg, cracked pepper, parmegiano, mozzarella, basil and olio. There's 12 selections of pizza, of which I would also recommend the Stellebello, which is prepared with crused tomatoes, panchetta, sausage, mushrooms, toasted pine nuts, mozzarella, basil and olio.

Another delight, which is prepared by Chef Paolinelli is the Puppa Al Pamodaro, a tomato soup, which is the best I've ever tasted. Prepared with fresh San Marzano tomatoes, basil oil, homemade fried croutons, chard, pecorino gelato, and a parmigiano chip, makes this soup one of the most ordered items on the menu. Ah, we must not forget the Tiramisu desert, prepared by Chef Paolinelli. It's a family tradition, where Mascarpone is used on top the lady fingers. What a delight.

In addition to the variosu pizzas and salads served at Settlebello's, there's a wide selection of wines from central and southern Italy, sparkling wines, sweet wines white wines red wines and all sorts of cocktails like the Moscow Mule, prepared with Aylesbury Duck Vodka, lime juice and house ginger syrup.

Settlebello's is located on 13455 Maxella Avenue, suite 250 just off Lincoln Boulevard in Marina del Rey. They're open 7 days a week for lunch and dinner from 11:30am-10pm Sunday -Thursday and on Friday and Saturday until 11pm.
