Mexican food and cuisine emerged from Mexico. Intense flavors, colorful ingredients, and strong spices are characteristics of Mexican cooking. Mexican foods are also rich in vitamins, minerals, and proteins.

The Aztec and Maya Indians are the originators of Mexican cuisine. The Spanish colonists brought new foods and changes in culinary techniques. The Aztec and Maya staples included turkey, chile peppers, corn, tomatoes, peanuts, avocados, pineapples, beans, sweet potatoes, chocolate, and vanilla. The Spanish introduced rice, pork, chicken, wine, onions, garlic, and beef. Today's Mexican food is a fusion of indigenous Indian and traditional Spanish ingredients and cooking methods.

The food of Mexico is regional and influenced by growing climate, geography, and ethnic origins. Northern Mexico is renowned for beef production. Southeastern Mexico is well known for spiced vegetable entrees. Mexican seafood is popular in the coastal regions of Mexico.

Traditional Mexican food dishes include tacos, enchiladas and mole sauce, ensalada (salad), salsa verde (green sauce), salsa roja (red sauce), pico de gallo (Mexican salsa), and guacamole.

Mexican appetizers include nachos, guacamole, rice, arroz Espanol (Spanish rice), Camote (sweet potato), squash, Bolillos (bread), pinto beans, black beans, refried beans, soup and consomme, potatoes, and salsa.

Mexican entrees include chicken and rice, bistec, burritos, chicken soup, caldo de res (beef soup), seafood soup, menudo, pozole, carne asada, carnitas, chiles rellenos, chimichangas, chorizo, empanadas, enchiladas (red and green), gorditas, huevos rancheros, milanesa, mole, picadillo, pollo, pozole, quesadillas, tacos, tamales, tortillas, and tostadas.

Mexican desserts and sweets include cajeta, pastel de queso, (cheesecake), empanadas, flan, and ice cream.

Las Vegas Mexican food restaurants feature authentic Mexican food, Cal-Mex (California-Mexican), Tex-Mex (Texas-Mexican), and New Mexican (the state of New Mexico-Mexican). Each has their own distinct flavors and unique styles. Most Las Vegas Mexican fast food restaurants and Mexican chain restaurants serve Cal-Mex and Tex-Mex food. Some of the best Mexican food in Las Vegas can be found at family owned and operated restaurants.
